Combine the yeast, sugar, and warm water in a small bowl and let stand until the yeast activates and becomes foamy. Stir in the salt and olive oil. Pour the flour into a large bowl, add the yeast mixture, and mix until a soft dough comes together. Turn out onto a lightly floured surface and knead by hand until smooth and elastic, about 15 minutes. Cover with a clean towel and allow to rest.

Roughly chop the spinach. Bring a large pot of salted water to a boil, add the spinach, and cook for about 2 minutes until just wilted. Drain thoroughly and return to the pot. Stir in the onions, lemon juice, garlic, basil, mint, and garlic salt. Cook over medium heat for another 2 minutes, stirring to meld the flavors.

Set a pizza stone in the oven and heat to 450°F (230°C). While the oven preheats, divide the dough into golf-ball-sized portions and flatten each into a roughly 5-inch round about ¼ inch thick. Spoon a tablespoon of the spinach mixture into the center of each round, stirring the filling regularly so the juices stay incorporated. Bring three edges up and pinch together to form a triangle, leaving a small opening at the top to vent steam during baking.

Bake for 10 to 15 minutes until the triangles are golden brown. Transfer to wire racks to cool.
