01Method
- 1
Set a heavy skillet or griddle to medium heat. Butter the top of the bun lid and the inside of the bottom bun, then place both cut-side down in the pan. Press flat with a spatula and toast until golden on both sides. Remove and set aside.
- 2
Turn the heat up to medium-high. Drop the beef as a rough ball into the hot pan and press it down hard with a spatula, using small circular movements to spread it into a very thin patty with ragged edges. Season with salt and pepper.
- 3
Lay the onion slice over the patty and let it cook until the edges begin to brown. Add the cheese on top and cook until fully melted. Scrape the patty off the pan and rest it on the top bun half. Flip the bottom bun so the crust faces inward, reassemble the burger, return it to the pan, and cook roughly 1 minute per side.
- 4
Whisk together the mayonnaise, ketchup, hot sauce, and fish sauce in a small bowl. Serve the sauce on the side with the burger.
