01Method
- 1
Prepare all ingredients and set them out before starting.
- 2
Trim and discard the rind from the Brie. Transfer the cheese to the freezer for 20 minutes so it firms up and becomes easier to slice.
- 3
While the Brie chills, coat a 24-cup mini muffin pan with cooking spray.
- 4
Roll the puff pastry out into a 10×14-inch rectangle. Slice it into 4 strips lengthwise and 6 strips crosswise to yield 24 equal squares. Press each square into one of the prepared muffin cups.
- 5
Remove the firmed Brie from the freezer and cut it into 24 roughly equal pieces, about ¾ inch each.
- 6
Spoon cranberry sauce into each pastry-lined cup, then nestle a piece of Brie on top and finish with a sprinkle of chopped walnuts and a pinch of sea salt. Refrigerate the assembled pan for at least 30 minutes (or up to 3 days covered). When ready to bake, heat the oven to 400°F (200°C).
- 7
Bake until the pastry is deep golden brown, 18 to 20 minutes.
- 8
Serve the bites while still warm.
