01Method

  1. 1

Cut the sirloin across the grain into thin strips, about ½ inch thick.

  2. 2

In a bowl, combine soy sauce, sugar, cornstarch, and ginger, whisking until smooth and the sugar is fully dissolved. Add the steak strips, tossing to coat evenly, and let them sit in the marinade.

  3. 3

Heat a portion of the oil in a wok or large skillet over medium-high heat. Working in batches to avoid overcrowding, stir-fry the steak strips until deeply browned, about 3 minutes per batch. Transfer the cooked meat to a bowl and repeat with the remaining strips, adding more oil as needed.

  4. 4

Return all the cooked steak to the wok and add the red onion. Stir-fry together for about 2 minutes until the onion begins to soften, then add the green bell pepper.

  5. 5

Continue stir-frying for another 2 minutes until the pepper turns bright green and starts to tender, then fold in the tomato wedges.

  6. 6

Toss everything together to combine and meld the flavors, then serve immediately.
