01Method

  1. 1

Combine the flour with half the sugar and salt in a large bowl, creating a well in the center. Warm the milk with water until tepid and pour into the well. Sprinkle the remaining sugar, crumble the yeast on top, dust lightly with flour, and stir the yeast into a paste. Let the mixture rise for about 10 to 15 minutes until bubbly.

  2. 2

Warm the butter and add it to the risen mixture, then knead thoroughly to form a smooth, non-sticky dough. This takes approximately 5 minutes with a stand mixer and hook attachment, or about 10 minutes by hand. Cover the bowl with a clean cloth and allow it to rise for 1 hour until the dough has doubled in volume.

  3. 3

Turn the risen dough onto a lightly floured surface and divide into 12 pieces. Roll each piece into an oval measuring 20 to 25 centimeters long and shape into a crescent by rolling from the longer side. Gently curve the ends toward the center. Place the pastries on a baking sheet lined with parchment paper, cover with a clean cloth, and let them rise for another 30 minutes.

  4. 4

Preheat the oven to 200 degrees Celsius. Lightly beat the egg with a fork and brush it over each pastry. Sprinkle with poppy seeds and bake in the preheated oven for 20 to 25 minutes until golden brown.
