Place a small non-stick pan over medium-high heat. Add the sesame seeds, spreading them in an even layer, and cook for 2 to 3 minutes, shaking the pan occasionally, until lightly golden. Watch closely — they can burn quickly once they start to color. Transfer to a small bowl and set aside. (Omit this step if your sesame seeds are already roasted.)
- 2
Combine the stock, soy sauce, and sesame oil in a small bowl and stir together. Set the mixture aside.
- 3
Heat the peanut or canola oil in a large, lidded sauté pan over medium-high heat. Add the broccoli florets and toss to coat them in the oil. Stir-fry for about 1 minute. Push the broccoli to the sides, creating a clear space in the center, and add the ginger and garlic. Drizzle a little extra oil over them and cook for about 30 seconds, stirring just the aromatics, until they smell fragrant. Mix the ginger and garlic together with the broccoli.

Pour the soy-sesame mixture into the pan and bring to a simmer. Lower the heat, cover the pan, and cook for 2 to 3 minutes, until the broccoli is just tender but still holds its shape. Remove from heat and lift the broccoli out with a slotted spoon into a bowl. Return the pan to the stove over high heat and reduce the remaining liquid until only a few tablespoons are left. Remove from heat, return the broccoli to the pan, scatter over the toasted sesame seeds, and toss everything to coat. Serve immediately.
