01Method

  1. 1

Heat the oven to 375°F (190°C). Place an ovenproof skillet over medium-high heat and brown the sausage, breaking it apart with a wooden spoon, about 5 minutes. Stir in the white parts of the green onions and cook for 1 minute.

  2. 2

Dust the flour evenly over the sausage mixture and stir continuously for 2 minutes. Pour in the milk and keep stirring until everything is well combined.

  3. 3

Let the mixture come to a gentle simmer and cook, stirring, until the gravy thickens, about 5 minutes. Fold in the green onion tops and hot sauce, then remove from heat.

  4. 4

Peel apart 6 biscuits (or as many as fit) into 2 or 3 layers each and arrange them in an overlapping pattern over the gravy. Set aside any leftover biscuits for another use. Brush a thin coat of beaten egg over the biscuit layers and scatter the everything bagel seasoning on top.

  5. 5

Transfer the skillet to the oven and bake until the biscuits are golden brown and fully cooked through, 18 to 20 minutes.
