01Method
- 1
Place a skillet on medium heat and cook the turkey bacon until just crispy, roughly 5 minutes. Move to a cutting board, leaving the rendered fat in the pan. Chop the bacon into small pieces.
- 2
Spread butter on both sides of each bread slice.
- 3
In a bowl, combine the avocado with lemon juice, garlic, turmeric, cumin, garlic salt, cayenne pepper, salt, and black pepper, mashing to a smooth, creamy consistency. Fold in the chopped bacon and tomato.
- 4
Return the skillet with bacon fat to medium heat. Crack the eggs directly into the pan and cook until the whites are fully set, about 3 minutes. Carefully flip each egg and cook for about 1 minute more. Season with salt and pepper, then push the eggs to one side of the pan.
- 5
Lower the heat and lay the buttered bread slices in the skillet. Toast for about 1 minute, then flip each slice and lay a piece of cheese on the toasted side. Spread a generous layer of the avocado mixture over the cheese. Cover the skillet to melt the cheese and cook until the underside of the toast is golden, about 2 minutes. Transfer to plates and top each toast with an over-easy egg.
