Set the oven to 325°F (165°C) to preheat.
- 2
In a large skillet over medium heat, melt the butter. Add the minced onion and cook, stirring occasionally, until tender, about 5 minutes. Mix in the ketchup, lemon juice, brown sugar, Worcestershire sauce, and yellow mustard, stirring until everything is heated through.
- 3
Warm a separate skillet over medium-high heat. Season the venison steaks with salt and pepper, then sear them for 3 to 4 minutes per side until browned. Arrange the steaks in a 9x13-inch baking dish and spoon the ketchup mixture evenly over them.
- 4
Bake in the preheated oven for about 1 hour, until the steaks are fully cooked and no pink remains in the center.
- 5
Remove the steaks to a serving platter, letting any excess sauce drip back into the baking dish. In a small bowl, whisk together the water and cornstarch until lump-free, then stir the mixture into the hot sauce in the baking dish until it begins to thicken. Spoon the sauce over the steaks before serving.
