Allow the steaks to reach room temperature for approximately 30 minutes, then pound them lightly with the palm of your hand, coat with cracked pepper, and season lightly with salt.
- 2
Heat the oil and butter together in a skillet, using about 1 tablespoon of each per steak. Arrange the steaks on the pan with adequate space between them, searing each side until golden brown to your preferred doneness, approximately 2–5 minutes per side. Transfer to a wire rack set over a plate, cover loosely, and reserve the pan juices.
- 3
In a separate skillet, melt half of the remaining butter until it turns golden, add the mushrooms and cook for 1 minute, season with salt and pepper, and remove from heat.
- 4
In a small pot, melt the remaining butter until it turns golden brown, add the spinach, and cook for 1 minute. Remove from heat, season with salt, and fold in the wasabi paste.
- 5
Arrange the spinach on plates, top with the cooked mushrooms and steak, drizzle with the pan juices, and finish with a grind of pepper. You may also add an extra dollop of wasabi paste on the side.
