01Method

  1. 1

Rinse the lentils thoroughly and soak them overnight in cold water. Drain and rinse again, then place in a pot with fresh water, salt, and half of the savory. Simmer until tender, approximately 30–45 minutes depending on lentil age.

  2. 2

In a large non-stick pot, heat the oil and brown the sliced onions and sausage pieces. Add the minced garlic and diced carrots, then sauté until golden. Season with the smoked paprika, caraway, and flour, stirring constantly until fragrant but not burned.

  3. 3

Pour in hot water and whisk to combine. Add the diced potatoes and enough additional hot water to reach a thick stew consistency. Season with salt and pepper, add the bay leaves and remaining savory. Cover and simmer gently for 15–20 minutes, stirring occasionally, until the potatoes are tender.

  4. 4

Stir in the drained cooked lentils and adjust seasoning with salt and pepper as needed. Add the vinegar to taste, bring to a simmer, and fold in the chopped parsley just before serving.

  5. 5

Serve with a soft-boiled egg cooked for 6 minutes, if desired.
