01Method
- 1
Set the oven temperature to 500°F (260°C).
- 2
Combine the sliced onion, cilantro, and lemon juice in a bowl; set aside. Lightly dust a baking sheet with flour.
- 3
Warm 1 tablespoon of olive oil in a skillet over medium heat. Add the ground lamb and break it into small pieces with a wooden spoon, cooking until nearly done through, about 5 to 6 minutes.
- 4
While the lamb cooks, press and stretch the dough on the prepared sheet into an oval. Allow it to rest for 1 minute, then re-stretch if it springs back.
- 5
Place the shaped dough in the center of the oven and bake until it puffs up and is nearly cooked, 5 to 7 minutes.
- 6
Stir the tomato paste, garlic, cinnamon, cumin, paprika, salt, and red pepper flakes into the cooked lamb. Continue cooking until aromatic, 1 to 2 minutes.
- 7
Pull the dough from the oven and brush the surface with the remaining tablespoon of olive oil. Spread the lamb mixture evenly across the crust.
- 8
Return the pizza to the oven for 2 minutes, then switch on the broiler and broil until the crust turns golden brown, an additional 2 to 3 minutes.
- 9
Transfer the pizza to a cutting board, slice into 8 pieces, and finish with the cilantro-onion mixture on top.
