01Method
- 1
Sprinkle the top of each salmon fillet with salt, a pinch of cayenne, and pat gently. Coat the surface with half the melted butter, scatter the chopped dill on top, then lay the smoked salmon slices over each fillet, covering the surface and sides. Refrigerate until ready to use.
- 2
Heat the oven to 400 degrees F (200 degrees C).
- 3
Spoon the mashed potatoes into two individual baking dishes (such as oval ramekins) and place a prepared salmon fillet on top of each. Add a touch more cayenne if desired. Transfer the dishes onto a baking sheet for easier handling.
- 4
Roast in the heated oven until the thickest part of each fillet reaches an internal temperature of 135–140 degrees F (57–60 degrees C), approximately 20 minutes.
- 5
Remove from the oven and brush the remaining melted butter over the top of each fillet. Finish with a scattering of green onions and serve alongside lemon wedges.
