01Method

  1. 1

    Heat your oven to 180°C.

  2. 2

Remove the skin from the salmon, season both sides with salt and pepper, and transfer to a baking dish lined with parchment paper.

  3. 3

Rinse the asparagus and trim away the woody ends, cutting any remaining tender portions into thin rounds if desired.

  4. 4

Add the asparagus to the baking dish alongside the salmon.

  5. 5

Melt the butter and crush the garlic into it.

  6. 6

    Cut the lemon in half.

  7. 7

Brush the garlic-infused butter over both the salmon and asparagus. Top the salmon with rosemary sprigs and place the lemon halves in the dish.

  8. 8

Bake for approximately 15 minutes until the salmon is cooked through but still moist.

  9. 9

Prepare the gnocchi according to package directions in salted boiling water.

  10. 10

If you sliced the asparagus ends, sauté them in any remaining garlic butter left in the pan, then toss with the cooked gnocchi.

  11. 11

Plate the baked salmon and asparagus, drizzle everything with the roasted lemon juice, and serve with the gnocchi.
