01Method

  1. 1

Heat the oven to 400 degrees F.

  2. 2

Warm the vegetable oil in a large ovenproof skillet over high heat. Season the pork loin generously on all sides with salt and pepper, then sear until deep golden brown, roughly 2 to 3 minutes per side. Move the pork to a plate and set aside.

  3. 3

Add the onion, carrot, celery, garlic, herb sprigs, and half the butter to the same skillet. Cook, stirring, until the vegetables take on some colour, about 8 minutes. Fold in the apple slices, then push everything to the edges and nestle the pork loin in the centre along with any resting juices. Transfer the skillet to the oven and roast until an instant-read thermometer inserted into the thickest part reads 140 to 150 degrees F, approximately 30 to 35 minutes.

  4. 4

Move the pork to a cutting board and tent loosely with foil. Arrange the apples and vegetables on a serving platter. Discard the herb sprigs. Return the skillet to high heat, pour in the vinegar, and scrape up any browned bits from the bottom with a wooden spoon. Let it reduce by half, then pour in the cider and reduce by roughly half again. Off the heat, whisk in the mustard and the remaining cold butter. Taste and adjust seasoning with salt and pepper.

  5. 5

Snip and remove the strings from the roast, then cut into slices about half an inch thick. Lay the slices over the apple and vegetable mixture. Spoon some sauce over the top and serve the remainder alongside.
