01Method
- 1
Cut the pork into thin strips and coat thoroughly on all sides with ground pepper, pressing it into the meat.
- 2
Prepare the vegetables: remove seeds from the chilli and mince finely, slice the mushrooms thickly, cut the scallions diagonally, and slice the bell pepper into thin strips. Cook the noodles according to package directions and rinse with cold water to prevent sticking. Slightly undercooked noodles are preferable to overcooked ones.
- 3
Heat a wok to the highest temperature. Add the sunflower oil and sear the pork quickly until browned. Remove from the wok and keep warm, covered.
- 4
Add the sesame oil to the wok and allow it to heat until smoking. Add the ginger, chilli, and mushrooms, stir-frying for about one minute. Add the bell pepper, scallions, broccoli, garlic, and green beans. Toss well and cook until the vegetables begin to soften slightly.
- 5
Return the noodles and pork to the wok, pour in the tamari, fish sauce, oyster sauce, and stock, then stir-fry for three minutes. Adjust the seasoning with additional tamari if needed and serve garnished with fresh cilantro leaves.
