01Method

  1. 1

Crush most of the herb leaves with the garlic cloves, mix with oil, and coat the meat thoroughly. Allow the meat to marinate for about an hour.

  2. 2

Heat the oven to 220°C. Season the meat lightly and wrap it with the cured ham slices.

  3. 3

Line the bottom of a baking dish with the vegetable stalks and place the wrapped meat on top. Pour the remaining marinade over it, sprinkle with the remaining herbs, and drizzle with oil.

  4. 4

Cover with a dampened crumpled piece of parchment paper (press it against the sides of the dish) or foil. Bake for fifteen minutes covered and the same duration uncovered.

  5. 5

Remove from the oven and let rest briefly. Slice diagonally and serve alongside roasted or mashed potatoes.
