01Method
- 1
Spread the ground meat into the bottom of a large mixing bowl, add the finely diced onion and minced garlic. Incorporate one whole egg and one yolk; reserve the remaining white for later use.
- 2
Mix in one slice of bacon cut into pieces, salt, and gently combine. Add fresh or dried herbs as desired and toss together lightly.
- 3
Sprinkle the breadcrumbs gradually over the mixture in even amounts. Let the meat rest while you prepare a baking dish and preheat the oven to 170°C.
- 4
Work the mixture together with your fingers thoroughly until all components are evenly distributed. Knead until the mass forms a cohesive ball.
- 5
Arrange bacon slices in the baking dish (overlapping slightly and extending over the edges) and place the meatball on top. Brush the ball with the reserved egg white before wrapping to help hold it together.
- 6
Wrap the meatloaf completely in the bacon slices, add a splash of water to the pan, and bake for 1 hour. About 15 minutes before serving, pour the beer around the meatloaf for extra depth.
