01Method
- 1
Position an oven rack roughly 6 inches below the broiler element and preheat the broiler. Coat an oven-safe skillet with a thin layer of vegetable oil.
- 2
In a bowl, whisk together the miso paste, rice vinegar, maple syrup, and chili sauce until smooth.
- 3
Place the salmon fillets skin-side down in the prepared skillet. Set over medium heat and cook until the skin begins to sizzle and crisp, about 2 to 3 minutes, then take the skillet off the heat.
- 4
Generously brush the miso glaze over the tops of the fillets. Transfer the skillet to the broiler and cook until the salmon is just cooked through and the glaze is caramelized and browned, approximately 8 minutes.
- 5
Lift the fillets away from the skin to serve, leaving the skins behind in the pan.
