01Method
- 1
Heat the oven to 220°C and place a pizza stone or an upside-down baking tray inside to preheat.
- 2
In a bowl, mix together the ricotta, Parmesan, chopped rosemary, red chilli flakes and garlic. Season with salt and set the mixture aside.
- 3
Cut the pizza dough into 4 equal portions. From each portion, form two circles — a larger one for the body and a smaller one for the head. Roll each piece out to about 5 mm thickness on a lightly floured surface. If the dough springs back, cover it with cling film and rest it for a few minutes before continuing.
- 4
Line two baking trays with greaseproof paper. Arrange two large dough circles on each tray, overlapping each with a smaller circle to create a snowman shape. Brush with olive oil, then dock the dough all over with a fork. Bake for 10–12 minutes until the edges start to colour and the bases are nearly cooked through.
- 5
Take the pizzas out of the oven and spread the ricotta mixture over the snowmen, leaving a small border around the edge. Scatter the torn mozzarella on top. Cut the orange pepper into four elongated triangles to serve as noses and place one on each snowman's face. Arrange olive slices as eyes, a curved smile and body buttons.
- 6
Slide the pizzas onto the hot stone or tray and bake for a further 3 minutes until the cheese just melts. Transfer to a board, tuck a sprig of rosemary beside each snowman's hand to suggest a broom, then serve immediately while hot.
