01Method
- 1
Pour water into a medium pot and bring to a boil. Add the lentils, then lower the heat to a gentle simmer. Cook covered until the lentils are fully tender, about 25 to 30 minutes.
- 2
Transfer the cooked lentils to a food processor or blender and blend into a smooth, thick paste.
- 3
Warm the olive oil in a large pot over medium-high heat. Add the onion and garlic and stir for 1 to 2 minutes. Pour in a small amount of chicken broth and continue cooking until the onion begins to soften, another 1 to 2 minutes.
- 4
Stir in the turmeric, cumin, chili powder, and red pepper flakes until the liquid turns a deep orange. Add the tomatoes along with more broth, cover, and cook for 3 to 4 minutes.
- 5
Pour in the remaining broth. Fold in the lentil puree gradually, stirring until fully incorporated into a thick, creamy consistency. Add the chicken sausage, cover, reduce heat to low, and cook for 15 to 20 minutes, stirring occasionally. Remove from heat, rest for 2 minutes, and serve warm.
