01Method
- 1
Activate the Saute function on the pressure cooker. Add pancetta and cook for 1 minute. Add cubed pork, onion, and shallot, sauteing until the pork begins to brown and the onion turns translucent, about 2 minutes. If ingredients start to stick, add a little olive oil.
- 2
Add the potatoes and chiles and continue to saute for 5 minutes. Stir in the corn, chicken stock, salt, and pepper, then turn off Saute mode.
- 3
Seal the lid and set the cooker to high pressure for 35 minutes, allowing 10–15 minutes for pressure to build before the timer starts.
- 4
Let pressure release naturally for approximately 15 minutes, then carefully remove the lid and switch back to Saute mode.
- 5
Pour in the half-and-half and stir, cooking until warmed through, 5–7 minutes. Adjust seasoning with salt and pepper as needed.
