01Method
- 1
Heat the oven to 400°F (200°C).
- 2
In a bowl, combine the oyster sauce, Dijon mustard, hoisin sauce, ginger, honey, and soy sauce, whisking until smooth, then fold in the green onions. Spread a quarter of the mixture across the bottom of a 9x13-inch baking dish. Lay the pork chops in a single layer over the sauce, then pour the remainder over the top to coat them fully.
- 3
Roast in the oven until the chops are cooked through with clear-running juices and an internal temperature of 145°F (63°C), about 30 to 40 minutes, basting once or twice during cooking.
- 4
Pour the accumulated pan juices into a saucepan. Switch the oven to broil and place the chops under the broiler until the surface is caramelized and golden, 1 to 2 minutes.
- 5
In a small bowl, mix the cornstarch with the water, then whisk this slurry into the reserved pan juices. Place the saucepan over medium heat and stir constantly until the sauce comes to a simmer and thickens, 1 to 2 minutes. Adjust seasoning with salt and pepper, then serve the sauce alongside the chops.
