01Method
- 1
In a bowl, blend together the butter, garlic, hot sauce, and black pepper until thoroughly combined. Set the mixture aside.
- 2
Heat an outdoor grill to medium-high and lightly coat the grate with oil.
- 3
Using kitchen shears, cut lengthwise through the center of each lobster tail's hard top shell and partway into the meat to butterfly them. Gently pull the shell halves apart with your fingers. Turn the tails over and thread a skewer through each one to keep them flat during cooking. Coat the tails with olive oil and season with salt.
- 4
Lay the lobster tails on the grill cut-side down; cook until the shells turn bright red, about 5 to 8 minutes. Flip them over and spoon some of the garlic butter onto the exposed meat through the shell opening. Continue grilling until the meat turns opaque white, another 4 to 7 minutes, basting once more with the butter mixture.
- 5
Transfer the lobster tails from the grill and plate them with additional garlic butter and lemon wedges on the side.
