01Method
- 1
Place the pork chops between two sheets of plastic wrap or parchment and pound them down to about ½-inch thickness. Coat both sides evenly with Greek seasoning.
- 2
Set a large nonstick skillet over medium-high heat and warm a portion of the oil. Add two chops and sear for 2 minutes, then flip and continue cooking until no pink remains in the center, roughly 2–4 minutes more. Transfer to a plate and keep warm. Add another portion of oil and cook the remaining two chops the same way.
- 3
Pour the last of the oil into the skillet. Add the cherry tomatoes, season with salt and pepper, and cook, stirring occasionally, until they begin to blister and soften, about 3 minutes. Stir in the olives and lemon juice and let everything cook together for another 2 minutes.
- 4
Spoon the tomato and olive mixture over the pork chops and finish each portion with a scattering of feta cheese and fresh parsley.
