01Method
- 1
Cut the chicken into portions, reserving the carcass for stock, and season the meat pieces.
- 2
Score the thighs to ensure even cooking throughout.
- 3
Prepare the marinade by whisking together yogurt, lemon juice, salt, pepper, and rosemary in a bowl.
- 4
Coat all chicken pieces in the marinade and let rest for approximately one hour.
- 5
Pour oil into a baking dish, arrange the chicken, sprinkle with rosemary, top with lemon slices, drizzle with lemon juice, and roast at 180°C.
- 6
After 45 minutes, remove from the oven. Transfer the pan juices to a saucepan and reduce. Return individual portions of chicken to warm through in the reduced sauce.
- 7
Meanwhile, prepare the salad by whisking lemon juice, sunflower oil, salt, and pepper together. Toss the greens with this dressing.
- 8
Plate the chicken, garnish with a roasted lemon slice and a sprig of rosemary, spoon the sauce over, and serve alongside the salad.
