01Method

  1. 1

Heat a gas grill to High on all burners for 10 to 15 minutes, then stretch and shape the pizza dough.

  2. 2

Combine tomatoes, garlic, and basil in a small bowl. Season to taste and set aside.

  3. 3

Turn half the burners down to Low to establish both direct and indirect heat zones.

  4. 4

Lay the dough over the direct heat side, close the lid, and grill until the underside is just set with visible char marks, 1 to 3 minutes.

  5. 5

Flip the dough with tongs and move it to the indirect heat zone. Coat the surface with olive oil, dust with garlic powder, and arrange mozzarella slices on top.

  6. 6

Continue grilling with the lid closed until the cheese has fully melted, about 3 minutes, then transfer the pizza off the grill.

  7. 7

Spoon the tomato mixture over the pizza, drizzle with balsamic glaze, cut into wedges, and serve immediately.
