01Method
- 1
Combine salt and sugar in a small bowl, then rub the mixture evenly over the ribs. Season all surfaces with red pepper flakes, five-spice powder, and black pepper. Place ribs into a large vacuum-seal bag, add liquid smoke, and seal the bag.
- 2
Submerge the sealed bag in a heat-proof container filled with water and attach a sous vide circulator. Set the temperature to 140°F (60°C) and cook for 8 hours.
- 3
Heat the oven to 450°F (230°C). Position an oven rack approximately 6 inches from the heating element and switch on the broiler. Set a wire rack over a rimmed baking sheet.
- 4
Remove the ribs from the bag and arrange them on the prepared rack. Brush generously with barbecue sauce.
- 5
Broil until the sauce is bubbling and caramelized, about 4 to 5 minutes. Flip the ribs, brush with additional sauce if desired, and continue broiling until the second side bubbles, 2 to 3 minutes more.
