01Method

  1. 1

Heat the oven to 350°F (175°C) and line 18 muffin cups with paper liners.

  2. 2

Mix the brown sugar, all-purpose flour, and the smaller amount of cinnamon together in a small bowl, then work in the butter with a spoon or your fingers until the mixture forms coarse crumbs. Set aside.

  3. 3

In a large bowl, toss the apples with the lemon juice, then stir in the white sugar, honey, buttermilk, oil, eggs, and vanilla until well combined. Fold in the oats.

  4. 4

In a separate bowl, whisk together the whole wheat flour, baking powder, the larger amount of cinnamon, baking soda, nutmeg, and salt, then gently fold this dry mixture into the apple-buttermilk batter until just incorporated. Distribute the batter evenly among the prepared cups and scatter the crumb topping over each.

  5. 5

Bake until the tops spring back when lightly touched, 20 to 25 minutes, then transfer to a wire rack to cool.
