01Method
- 1
In a medium skillet over medium heat, melt the butter. Add the onion and cook, stirring occasionally, until softened, about 5 minutes. Season with herbes de Provence, salt, and pepper, and cook for 1 minute longer. Fold in the spinach, then take the pan off the heat and set aside.
- 2
Coat the interior of a 3-quart (9×13-inch) baking dish with cooking spray. Arrange one-third of the bread cubes in a single layer on the bottom. Spread one-third of the spinach mixture over the bread, then sprinkle with one-third of the mozzarella. Repeat the layering process two more times with the remaining bread, spinach mixture, and cheese.
- 3
In a medium bowl, whisk the eggs and milk together with salt and pepper until fully combined. Pour the egg mixture evenly over the layered contents of the baking dish. Cover tightly with plastic wrap and refrigerate for at least 8 hours or up to 1 day.
- 4
Take the dish out of the refrigerator 30 minutes before baking to let it come closer to room temperature.
- 5
While waiting, heat the oven to 350°F (175°C).
- 6
Bake uncovered until the strata is puffed, golden on top, and set all the way through, 45 to 55 minutes. Allow it to rest for at least 5 minutes before slicing and serving.
