01Method
- 1
Heat the oven to 350°F (175°C).
- 2
Combine the baguette cubes with olive oil, salt, and pepper in a large bowl, then spread them out on a baking sheet.
- 3
Set a wire rack over a second baking sheet and arrange the bacon slices in a single layer on the rack.
- 4
Bake both the bread and bacon until the bacon is browned and the croutons are golden, about 15 minutes, flipping the bread halfway through. Allow everything to cool at room temperature, then chop the bacon finely.
- 5
In a large salad bowl, use a fork to work the anchovy fillets, garlic, and mustard into a paste. Stir in the mayonnaise, half the Parmigiano-Reggiano, lemon juice, and Worcestershire sauce, then season with salt and pepper and whisk until smooth and combined.
- 6
Using a mandoline, thinly shave the Brussels sprouts directly into the bowl of dressing. Add half the bacon and half the croutons, then toss everything together until well coated. Top with the remaining cheese, croutons, and bacon before serving.
