01Method
- 1
Put the dates into a small bowl and cover them fully with hot water. Allow to soak until they soften, about 10 to 15 minutes. Drain the dates and set the soaking liquid aside.
- 2
Add the soaked dates, almonds, coconut, walnuts, half the sesame seeds, coconut oil, vanilla, cardamom, cinnamon, and salt to a large food processor. Pulse repeatedly until the mixture comes together into a soft dough, pausing to scrape down the bowl sides as needed. If the mixture seems too dry, incorporate the reserved soaking liquid one tablespoon at a time until the right texture is achieved.
- 3
Transfer the dough onto a sheet of parchment paper and shape it into a log roughly 10 inches long and 1½ inches wide, using lightly oiled hands. Scatter the remaining sesame seeds across all sides of the log and press them in gently. Wrap the log in the parchment and chill in the refrigerator until firm, at least 1 to 2 hours.
- 4
Slice the log into approximately sixteen rounds, each about ½ inch thick. Serve right away or keep refrigerated until ready to serve.
