01Method
- 1
Preheat the oven to 400°F (200°C) and set out all your ingredients.
- 2
Warm a small amount of olive oil in a large skillet over medium heat. Add the sausage pieces and cook, stirring occasionally, until well browned, 5 to 10 minutes. Transfer the sausage to a large baking dish.
- 3
Pour the remaining olive oil into the same skillet and add the potato slices. Cook, stirring from time to time, until golden brown, about 10 minutes.
- 4
Move the browned potatoes to the baking dish, leaving the residual oil in the skillet.
- 5
Add the peppers and onions to the skillet and sauté over medium heat until they begin to soften, about 5 minutes.
- 6
Transfer the vegetables to the baking dish. Pour the white wine and chicken stock over everything, then sprinkle with Italian seasoning, salt, and pepper.
- 7
Gently toss the sausage, potatoes, and vegetables together so everything is evenly combined.
- 8
Bake in the preheated oven until the dish is hot and bubbling, 20 to 25 minutes. Serve immediately.
