01Method
- 1
Preheat the oven to 400°F (200°C) and gather all ingredients.
- 2
Place a skillet over medium-high heat and cook the sausage pieces until browned on both sides and heated through, about 3 minutes. Set aside.
- 3
Crack 4 eggs into a bowl, add water, salt, and pepper, and whisk until fully combined.
- 4
Melt butter in a small nonstick skillet over medium-low heat. Pour in the egg mixture and cook, stirring frequently, until just barely set and still creamy. Remove from heat.
- 5
Unroll one puff pastry sheet onto a lightly floured surface and roll it out slightly. Arrange small portions of scrambled eggs in a 3×4 grid across the sheet.
- 6
Distribute the cheese evenly over each egg portion, then place one sausage piece on top of each. Lightly brush water around and between each filled section.
- 7
Roll the second pastry sheet out a little larger than the first and lay it loosely over the top.
- 8
Press the top pastry down around each filling portion to seal, then cut into 12 individual squares using a pizza cutter or knife.
- 9
Firmly press the edges of each square to ensure a proper seal, then transfer to a parchment-lined baking sheet.
- 10
Beat the remaining egg and brush it over each square, then sprinkle evenly with bagel seasoning.
- 11
Bake until the pastries are puffed and deep golden brown, 15 to 18 minutes.
