Cook the cavatappi in a large pot of salted boiling water according to package directions. Meanwhile, toast the rye bread, then spread with butter. Roughly chop the toasted bread and pulse in a food processor together with the parsley and paprika until coarse breadcrumbs form. Set aside.
- 2
Warm a saucepan over medium heat. Melt the butter, then whisk in the plain flour and cook for 1 minute. Pour in the milk, season with salt and pepper, and stir until the sauce thickens, about 5–6 minutes. Mix in the mustard, then melt in two-thirds of the combined cheeses.
- 3
Preheat the grill to high.
- 4
Drain the pasta and return it to the hot pot. Add the chopped corned beef and sauerkraut and toss to combine, then fold in the cheese sauce until everything is well coated. Transfer to a casserole dish, scatter the breadcrumbs and remaining cheese over the top, and grill for 3–4 minutes until browned. Serve immediately.
