01Method
- 1
Whisk together ¼ cup of the balsamic vinaigrette with black pepper, honey, and orange liqueur to form the glaze. Zest the orange directly into the mixture and stir to combine.
- 2
Cut away the peel and all white pith from the orange, then slice into rounds and cut each round into quarters. Set aside.
- 3
Heat the oven broiler. Line a broiler pan with nonstick foil. Season the salmon fillets with salt, place on the pan, and broil — basting frequently with the glaze — until cooked through, approximately 8 minutes. Do not flip.
- 4
In a large bowl, toss the spring greens with the asparagus, fennel, and the remaining balsamic vinaigrette. Distribute evenly across four plates, place a salmon fillet on top of each, and finish with the reserved orange pieces and shaved Parmesan.
