01Method

  1. 1

Prepare and measure out all ingredients before starting.

  2. 2

In a large pot over medium-high heat, warm the sun-dried tomato oil until it shimmers. Add the sausage and cook, breaking it apart occasionally, until nearly cooked through, about 5 minutes. Stir in the onion and garlic and continue cooking until both have softened, about 5 more minutes.

  3. 3

Add the tomato paste and sun-dried tomatoes; stir constantly for about 2 minutes until the paste darkens slightly and smells fragrant.

  4. 4

Pour in the broth and cream, then add the basil, salt, Italian seasoning, and paprika. Bring to a boil over medium heat, stirring from time to time, until the surface is bubbling and frothy, about 12 minutes. Add the orzo, lower the heat to medium-low, and cook uncovered, stirring occasionally, until the pasta reaches al dente texture, about 8 minutes.

  5. 5

Turn the heat to low. Stir in the spinach, cream cheese, and Parmesan and cook, stirring frequently, until the cream cheese is fully incorporated and the spinach has wilted, about 5 minutes.

  6. 6

Ladle into bowls and finish with extra Parmesan and fresh basil just before serving.
