01Method
- 1
Place bacon in a large soup pot over medium-high heat. Fry until crispy, roughly 10 minutes, then transfer to a paper towel-lined plate and allow to cool.
- 2
Add the ground beef to the same pot and press it flat with a spatula. Brown the bottom side for about 5 minutes, then flip and brown the other side for another 5 minutes. Stir in the broth, cheddar cheese, cream cheese, pickles, tomato paste, steak sauce, mustard, onion powder, chili powder, and black pepper, mixing thoroughly and breaking the meat into smaller chunks.
- 3
Lower the heat and stir until the cream cheese fully melts, about 3 minutes. Cover and let the soup simmer for an additional 25 minutes.
- 4
Ladle the soup into bowls. Distribute the romaine lettuce among the bowls and fold it into the hot soup. Crumble a slice of cooked bacon over each bowl and top with tomatoes and red onion.
