01Method
- 1
Prepare all ingredients before starting.
- 2
Pour olive oil into a heavy skillet and heat over high until it just starts to smoke. Arrange shrimp in a single layer and let cook undisturbed for 1 minute.
- 3
Sprinkle shrimp with salt, then stir and continue cooking until they start to turn pink, about 1 minute.
- 4
Add the garlic and red pepper flakes, stirring constantly for 1 minute.
- 5
Pour in the lemon juice and caper brine, then add one piece of butter and half the parsley; stir until the butter melts, about 1 minute.
- 6
Lower the heat and stir in the remaining butter pieces one at a time. Cook, stirring, until the sauce thickens and the shrimp are fully pink and opaque, 2 to 3 minutes.
- 7
Lift the shrimp out with a slotted spoon and set aside in a bowl. Continue cooking the pan sauce, adding a small splash of water if it becomes too thick, about 2 minutes.
- 8
Adjust seasoning with salt, then plate the shrimp and spoon the sauce over the top. Finish with the remaining parsley.
