Dissolve the yeast in the warm water in a small bowl and allow it to sit for about 10 minutes until foamy. Meanwhile, heat the milk in a small saucepan just until it begins to bubble, then remove from heat and cool to lukewarm.
- 2
In a large bowl, mix together the first portion of flour and the smaller amount of sugar, then stir in the lukewarm milk until a smooth mixture forms. Fold in the yeast mixture, stir well, cover, and leave to rise until doubled in volume, approximately 1 hour.
- 3
Add the beaten eggs, remaining sugar, melted butter, and salt, then incorporate enough of the second portion of flour to form a stiff dough. Cover and allow to rise a second time until doubled, about 1 hour.
- 4
Deflate the dough and split it into 2 equal pieces. On a lightly floured surface, roll each piece out to about ½ inch thick. Cut rounds using a biscuit cutter, then score 2 small slits in the center of each piece with a sharp knife. Cover and let rise a third time until doubled, roughly 1 hour.
- 5
Heat the oil in a deep-fryer or heavy saucepan to 190 degrees C (375 degrees F).
- 6
Working in batches, fry the doughnuts in the hot oil until golden on each side, about 3 to 4 minutes per side. Transfer to paper towels to drain, then roll in confectioners' sugar while still warm.
