01Method
- 1
Heat the oven to 350°F (175°C).
- 2
Mix together the cheddar and Parmesan cheeses in a small bowl; set aside.
- 3
Set a steamer basket over a pot of boiling water. Add the broccoli, cover, and steam until just tender, 2 to 6 minutes.
- 4
While the broccoli steams, melt butter in a large skillet over medium heat. Add the mushrooms, onion, and garlic and cook, stirring occasionally, until softened, 5 to 7 minutes.
- 5
In a large bowl, whisk the condensed soup, sour cream, milk, and mayonnaise until smooth. Stir in half of the cheese mixture and season with salt and pepper. Fold in the sautéed vegetables.
- 6
Spoon a thin layer of the cheese-vegetable sauce over the bottom of a 9×13-inch baking dish. Layer the cooked rice on top, followed by the steamed broccoli, then the chicken. Pour the remaining sauce over everything and smooth it evenly with a spatula.
- 7
Bake for 30 minutes, then scatter the remaining cheese mixture over the top and continue baking until golden and bubbling, about 15 minutes more.
