01Method

  1. 1

Trim a thin slice off the bottom of each grapefruit half so they sit flat in the pan without tipping. Using a small paring knife, run the blade along the edge where the fruit meets the rind, then carefully cut along the segment membranes — slice only down to the rind, not through it.

  2. 2

Line a broiling or roasting pan with aluminum foil and arrange the grapefruit halves cut side up.

  3. 3

Sprinkle brown sugar evenly across the exposed flesh of each half, avoiding the rind. Adjust the amount to taste — yellow grapefruit tends to be more tart and may benefit from a little extra sugar compared to ruby red.

  4. 4

Slide the pan under the broiler and cook for 3 to 5 minutes, until the sugar melts, bubbles, and starts to caramelize. Remove from the oven, allow to cool briefly, and serve while still warm.
