01Method

  1. 1

Preheat the oven to 350°F (175°C) and have all ingredients ready.

  2. 2

In a medium bowl, combine the brown sugar, flour, melted butter, salt, and ½ tsp of the cinnamon, mixing until the mixture resembles coarse crumbs. Set aside.

  3. 3

Lightly grease a 9×13-inch baking dish with cooking spray. In a large bowl, whisk together the milk, heavy cream, eggs, maple syrup, vanilla, and the remaining cinnamon until smooth. Add the brioche cubes and toss to coat all pieces in the custard mixture (the liquid will not be fully absorbed).

  4. 4

Pour the bread mixture into the prepared dish and scatter the granulated sugar evenly over the surface.

  5. 5

Distribute the brown sugar crumble evenly over the top. Allow the casserole to rest at room temperature for 10 minutes.

  6. 6

Bake for 35 to 40 minutes, until the casserole is set and the top is golden brown and puffed. Serve immediately, with extra maple syrup on the side.
