- 1
Gather all ingredients and heat the oven to 350°F (175°C). Line a baking sheet with aluminum foil.
- 2
Arrange the bacon in a single layer on the lined baking sheet. Mix together pecans, brown sugar, chili powder, and sea salt in a small bowl, then scatter the mixture evenly over the bacon strips.
- 3
Bake until the bacon is crisp and golden, 18 to 20 minutes. Move to a wire rack to cool, then roughly chop into pieces.
- 4
In a nonstick skillet over medium-high heat, melt the butter. Add the apple slices along with one tablespoon of the maple syrup and sauté, letting the apples sit undisturbed for 60 to 90 seconds between stirs, until tender and caramelized, about 8 minutes.
- 5
Pour in the remaining maple syrup and add the cinnamon, stir to combine, then transfer the apple mixture to a bowl.
- 6
Cut a circle of parchment paper slightly larger than the Brie and set it on a clean baking sheet. Place the Brie on the parchment and pile the caramelized apples generously on top.
- 7
Bake for 5 minutes, then scatter the praline bacon pieces over the top and continue baking until the surface is bubbling, another 2 to 3 minutes.
- 8
Using a wide spatula, transfer the Brie to a serving platter. Finish with a pinch of sea salt and a sprinkle of fresh rosemary.
