01Method

  1. 1

Using a large bowl, cream together the butter and sugar at medium speed until light and fluffy. Mix in the egg yolk and apple butter, then incorporate the flour, cinnamon, apple pie spice, and vanilla, mixing on low until a cohesive dough forms.

  2. 2

Split the dough into two equal portions. Flatten each into a 6-inch round disc on waxed paper and chill in the refrigerator for 30 minutes.

  3. 3

Heat the oven to 350°F (175°C).

  4. 4

Flip one dough disc into an ungreased 9-inch round pie plate. Using lightly floured hands, press the dough evenly across the bottom and up the edges. Crimp the edge using the handle of a wooden spoon. Score deeply into 8 wedge sections and prick all over with a fork. Repeat the process with the second disc in another pie plate.

  5. 5

Bake for 35 minutes until golden. Transfer to a wire rack, let cool completely, then cut along the scored lines into wedges.
