01Method
- 1
Set the air fryer temperature to 360°F (180°C) and allow it to preheat.
- 2
Combine the flour, half the sugar, baking powder, baking soda, and salt in a medium bowl. Work the butter into the dry mixture using a pastry blender or two knives until the texture resembles coarse crumbs.
- 3
Whisk the egg in a small bowl with a fork. Transfer a portion of the beaten egg (about 2 tablespoons) to a separate small bowl and reserve. Stir the buttermilk and vanilla into the remaining egg, then fold this mixture into the flour mixture until just combined. Carefully fold in the blueberries.
- 4
Turn the dough out onto a lightly floured surface and knead gently — about 8 to 10 strokes — until it's no longer sticky. Flatten into a roughly 6-inch round. Cut into 8 wedges without pulling them apart, dipping the knife in flour between each cut.
- 5
Mix the remaining sugar with the orange zest in a small bowl. Brush the top of the dough round with the reserved egg, then scatter the sugar-zest mixture over the surface. Separate the wedges and arrange them in a single layer in the air fryer basket, working in batches if needed.
- 6
Air fry until the scones are golden on top, about 6 minutes. Serve while still warm.
