01Method

  1. 1

Assemble all the required ingredients before starting.

  2. 2

Combine the flour, baking soda, and salt by sifting them together into a bowl.

  3. 3

Using an electric mixer, cream together the sugar and vegan margarine in a large bowl until smooth and fluffy, approximately 2 minutes.

  4. 4

Blend in the vanilla extract, then fold in the flour mixture. Add the coconut milk one tablespoon at a time, mixing until the dough holds together.

  5. 5

Shape the dough into a disk, wrap it tightly in plastic wrap, and chill in the refrigerator for 30 minutes.

  6. 6

Heat the oven to 350°F (175°C) and line two baking sheets with parchment paper.

  7. 7

On a lightly floured surface, roll the chilled dough out to a thickness of 1/4 to 1/2 inch. Cut shapes with a flour-dusted cookie cutter, re-flouring as needed, and transfer the cut cookies to the prepared baking sheets.

  8. 8

Bake until the edges just begin to turn golden, about 10 minutes.
