01Method

  1. 1

Heat the oven to 375°F (190°C) and grease a 9x12-inch baking dish.

  2. 2

Hull the strawberries by cutting out the green tops with a small sharp knife or huller. Place each berry cut-side down, halve it, then slice each half lengthwise several times before cutting across to create a uniform dice.

  3. 3

In a bowl, mix the diced strawberries with lemon juice, sugar, and cornstarch until evenly combined and no dry cornstarch remains. Set aside.

  4. 4

In a separate bowl, stir together the oats, both flours, brown sugar, salt, and ginger. Pour in the melted butter and mix until all the dry ingredients are thoroughly coated.

  5. 5

Spread roughly 60% of the oat mixture into the prepared dish in an even layer, pressing it down gently with the back of a spoon or spatula.

  6. 6

Use a slotted spoon to distribute the strawberry mixture over the base without pressing it in. Keep any collected juices in the bowl. Scatter the remaining oat mixture on top, press down lightly, then drizzle the reserved juices over everything.

  7. 7

Bake until the top turns golden brown, about 45 minutes. Press the surface down with a spatula, then allow to cool completely, about 1 hour. Slice into bars and serve.
