01Method
- 1
Combine the rice with water in a microwave-safe bowl. Cover and microwave on high until all the water has been absorbed, approximately 8 minutes. Fluff with a fork, then cover and keep warm.
- 2
In a small bowl, whisk together the soy sauce, water, honey, cider vinegar, and cornstarch until smooth. Set the sauce aside.
- 3
Warm olive oil in a nonstick skillet over medium heat. Add the garlic and sauté for about 10 seconds. Add the broccoli, carrots, onion, and black pepper; stir-fry until the vegetables are tender, about 5 minutes. Add the mushrooms and continue cooking for 2 minutes. Transfer all the vegetables to a plate and set aside.
- 4
Place the skillet back over heat and pour in the sauce; let it cook for 1 minute. Add the shrimp and cook, stirring, until they turn pink, are fully opaque, and the sauce has thickened, about 3 minutes. Return the vegetables to the pan, toss to combine, and serve over the brown rice.
