01Method
- 1
Whisk together the soy sauce, freshly squeezed orange juice, sesame oil, stevia, garlic powder, and ground ginger in a small saucepan. Place over medium-high heat and bring to a boil, stirring continuously, until the sauce reduces and thickens slightly. Remove from heat and set aside.
- 2
Heat a large skillet over medium-high heat, add the vegetable oil, and let it heat until shimmering, about 1 to 2 minutes. Add the chicken pieces and minced garlic and stir-fry for 2 to 3 minutes. Toss in the broccoli and continue cooking for another 4 to 6 minutes. Add the bamboo shoots and all three bell peppers and stir-fry for a further 4 to 6 minutes.
- 3
Pour the prepared teriyaki sauce carefully into the skillet, being mindful of splattering. Continue cooking, stirring occasionally, until the chicken is cooked through with no pink remaining and the vegetables are tender, approximately 5 minutes.
- 4
Take the skillet off the heat and fold in the green onions and black sesame seeds, setting a small portion of each aside for garnish. Spoon immediately over the combined white and wild rice and top with the reserved garnishes.
